Project Condor Huila Colombia is our espresso coffee par excellence and possibly the coffee with the most beautiful story in our catalog.

What is the Condor Project

The Condor Project of Huila is an initiative that brings together 96 women coffee growers from the south of the Huila department (Colombia). Its goal is to provide them access to:

  • Professional processing infrastructure (washing plant, dryers, humidity control).
  • Technical advice to optimize their processes.
  • Real traceability with roasters around the world.
  • Fair prices for their coffee.

The project was built with private capital from Cóndor Specialty Coffee, with contributions from the governments of Norway, Switzerland, and Huila, SENA, and the Regional Autonomous Corporation of Alto Magdalena. The processing plant is one of the most advanced in the region.

Including it in our catalog is our small way of supporting the project.

The coffee

Variety: Colombia, Caturra, and Castillo (blend from various farms in the project).
Altitude: 1,800 masl.
Process: traditional washed, fermentation 24-36 hours, solar drying 15-20 days.

It’s a clean, balanced coffee, no experiments — the quality comes from control on the farm and care in processing. Just what a good espresso asks for.

Tasting notes

Vanilla, caramel, orange, tangerine, soft citrus. Medium body, pleasant sweetness, bright but not aggressive acidity. The clean cup you expect from a well-made wash.

How to prepare it

This is our coffee for espresso:

  • Dose: 18 g finely ground.
  • Yield: 36-40 g (ratio 1:2 to 1:2.2).
  • Extraction time: 25-30 seconds.
  • Temperature: 93 °C.
  • Pressure: 9 bar.

If it comes out acidic and fast (<25 s), tighten the grind a notch. If it comes out bitter and slow (>30 s), loosen the grind a notch. The best extraction is the one that keeps the tasting profiles clean.

It also works in an Italian moka — ratio 1:10, medium heat, remove before the end.
