However, the real challenge begins once roasted: preservation! We explore why storing coffee properly is almost as important as roasting it.

• The number one invisible enemy: oxygen. Oxidation "steals key pieces" from coffee molecules, directly affecting the volatile organic compounds (responsible for complex aromas and flavors, like floral and fruity notes) and the lipids (which, when oxidized, cause a rancid taste and smell).

• The importance of grinding coffee just before brewing. Grinding increases the surface area exposed to air drastically, opening the door to oxygen. That's why storing it whole bean is the first line of defense.

• The need for a resting period or degasification (between 5 and 15 days) after roasting. During roasting, the bean accumulates carbon dioxide (CO2) that needs to be gradually released. If coffee is used right after roasting, the CO2 interferes with water extraction, resulting in uneven, acidic, or watery coffee.
