The real magic begins with the post-harvest processes, which define how the seed is separated from the fruit pulp and how it is dried. Each method radically changes the final flavor in your cup:
• Washed: A common process that results in a very clean cup, with defined, crisp flavors and bright acidity, allowing the seed to "speak for itself."
• Natural: Where the whole cherry is sun-dried for weeks. This produces very intense, fruity cups, with notes of red fruits, wine-like qualities, full body, and complex sweetness. Beware! Don’t confuse it with the "natural coffee" from Spanish supermarkets, which only indicates that it is not roasted.
• Honey: An intermediate path where part of the mucilage (sweet, sticky substance) remains attached to the seed while it dries. This creates profiles ranging from clean and bright (Yellow Honey) to sweeter, fuller-bodied, and fruity notes (Black Honey).
• Controlled fermentations: Here science and experimentation take center stage. We are talking about processes like anaerobic or carbonic maceration, where the coffee is fermented in sealed tanks, sometimes injecting CO2.
These methods control temperature, time, and pH to achieve super distinct, intense flavor profiles, with notes of wine, very ripe tropical fruits, or spices.
